Soy Lecithin

Lecithin gums are obtained from soy oil after the oil has been extracted from the soybean flakes. Lecithin is removed from the soybean oil using a “steam precipitation process.” Precipitate is sprayed on, then dried to be transformed into a lecithin powder with can be used as an ingredient in some foods. Once this whole process is finished, the lecithin can be used in the Nutella recipe. Soy lecithin is what gives chocolate the smooth, creaminess we all love.
